Raw material rice yamadanishiki, rice polishing ratio 70%, alcohol content 15 degrees or more and less than 16 degrees, sake content +7.7, acidity 1.8, amino acid content 1.1
Junmainigorizake is made by polishing yamadanishiki to 70% and using the entire amount.
By making it into nigori sake, you can enjoy all the good parts of yamadanishiki to the fullest.
Nigori sake has a sweet image, but it has a good balance of gentle spiciness and the sweetness of the mash.
Furthermore, since yeast still remains in freshly pressed sake and it continues to ferment, the sake is heated to maintain a consistent quality and flavor.
