The term "falconer" refers to someone who handles falcons.
The name "Takayū" is said to have originated when the first head of the family, Kenzo Otani, was building the sake brewery's kiln and saw a hawk circling overhead several times. He considered it an auspicious sign for his family and thus the name "Takayū" was born. Later, a hawk flew into the back room on the second floor, and that room was named "Mai-Taka-dō" (Dancing Hawk Hall), showing his deep love for hawks.
Given this history, it is believed that the product name "Takasho" (Takasho) was coined by the president and master brewer at the time.
This Junmaishu uses 70% polished Yamadanishiki rice. With a lower alcohol content, it's the perfect everyday drink for Junmaishu lovers, allowing you to appreciate the deep, mellow flavor of Yamadanishiki.
