The king of sake rice, "yamadanishiki," produced in Tottori Prefecture, is polished to 35% using our own rice.
The koji is made in a wooden box called "morobuta," and the brewers stay overnight to care for the koji, which results in high-quality koji that will produce beautiful sake.
Thanks to the long-term low-temperature fermentation process, this sake has a very soft mouthfeel and a gorgeous, pleasant aroma that lingers in your nose.
