This is a raw sake called "Junmai Ginjo Ryo" brewed using a yeast called Lacancea, which was isolated from Mizunara oak trees on Mt. Daisen.
Lacancea yeast is characterized by producing lactic acid as well as alcohol during fermentation.
The slight acidity in the flavor of the sake gives it a refreshing impression.
Enjoy the fresh taste of unpasteurized sake.

It was scheduled to be released this summer.
We have been working at a rapid pace to prepare for the release of "Junmai Ginjo Ryo" and "Junmai Ginjo Ryo Namazake".
As it did not meet our quality standards for taste, we have decided to postpone its release this season.
We are very sorry for this disappointing news to our customers who look forward to this event every year.
We will continue to strive to produce even more stable sake in the future, so we hope you will continue to support us.
