Using a yeast called Lacansea isolated from Mizunara in Daisenwe brew this sake.
Lacansea yeast produces lactic acid at the same time as alcohol during fermentation, which results in a slight acidity in the taste of the sake. This leaves a refreshing impression.

We have been working at a rapid pace to prepare for the release of "Junmai Ginjo Ryo" and "Junmai Ginjo Ryo Namazake".
As it did not meet our quality standards for taste, we have decided to postpone its release this season.
